Kaolin Stones

Ingredients:

200ml Water
150g Kaolin
100g Lactose
1g Black Food Colouring Paste
1.25g Maldon Salt
15 New potatoes

Method:

Combine Kaolin & Lactose
Add water & blend
Add salt & colouring & blend
Allow batter to refrigerate for 12 hours
Boil potatoes in their skins in salted water, until cooked but still firm
Pierce potato with a wooden skewer & dip into batter mix to coat
Stand potatoes vertically on skewer & dehydrate in oven at 55ÂșC for 30 minutes
Remove skewer & cover hole with more partially dehydrated batter, allow to dry ---- Reheat gently in oven & serve hot
