Elderflower Sorbet

Ingredients:

260ml Water
55g Sugar
50g Glucose
2g Powdered Milk
1.2g Staboline
10g Trimoline
240ml
25ml Lemon Juice

Method:

Dissolve Trimoline and Glucose
Mix together Sugar, Powdered Milk & Staboline
Add to above and heat to 85°C
Refrigerate for 12 hours
Mix base with Cordial & Lemon Juice and freeze in sorbet maker
