Antifreeze Emulsifier.
It is a thick, neutral liquid, with a sweet taste that when cold becomes gelatinous to the touch.
- Perfect for ice cream, sorbets, biscuits, chocolates, truffles, mousses etc.
- It has a very high boiling point (290ºC) and a fusion point of 18ºC.
- Glycerine absorbs water and air. (For example, if you left a jar of glycerine open in time you would get 80% glycerine and 20% water).
- Therefore it is a very good antifreeze, used in the making of ice-creams while also reducing the sweetness.
- Size: 1.3kg.
