Glycerine is a thick, neutral liquid, with a sweet taste that when cold becomes gelatinous to the touch. It has a very high boiling point (290ºC) and a fusion point of 18ºC. Glycerine absorbs water and air. (For example, if we leave a jar of glycerine open in time we will get 80% glycerine and 20% water). Therefore it is a very good anti-freeze used in the making of ice-creams while also reducing the sweetness.
