Rose petals from Provence in France, picked in the morning when their scent is at its best, are left to steep in clear balsamic vinegar in oak barrels for a long time. Pressed and filtered they are left to stand in the dark for a whole winter. This is perhaps the most delicate and refined vinegar of the Italian-French Riviera.
