The juice of Calabrian Mandarins slowly fermented with clear balsamic in oak barrels. It is then filtered and left to stand over winter in glass demijohns so as not to affect the colour and flavour of the mandarins. The mandarin vinegar thus obtained has the fresh, delicate but persistent aroma of citrus fruits.
