Sferificación


Sferificación (or Spherification) is a spectacular culinary technique that was put into practice at elBulli in 2003; it allows you to prepare recipes never before imagined. To achieve Sferificación you need to control the gelification of a liquid by mixing with Algin and submerging in a Calcic bath, allowing you to make spherical preparations in various sizes: caviar, eggs, gnocchi, ravioli… With some ingredients, Citras must also be added to correct the acidity levels. For optimum results, Sferificación requires the use of specific tools (Eines).

The Sferificación Kit contains everything needed to make spherical preparations. It consists of three essential ingredients - Algin, Calcic and Citras, as well as the appropriate tools (Eines). All ingredients are also available separately, please see each product for further information
